In October I found out I was allergic to sugar cane (sigh...) and therefore, I decided to give up sugar in January for three months to reset my system. Being an avid baker, I have had to find other ways to get sugar in my cookies.
The solution: bananas!.....and unsweetened applesauce
And so I give you: banana applesauce cookies and peanut butter banana applesauce cookies!
WARNING: These cookies will not taste like a normal cookie (because they are a healthy cookie), but my roommate and boyfriend approved of them, so I hope you like them too!
These cookies are light, fluffy, and moist. You can make them with or without peanut butter. I just made them with peanut butter tonight and they were awesome!
Here's the recipe:
*Important note: I tend not to measure things when I bake cookies now, because I just throw ingredients in the bowl until I get a good consistency. But I will try to give you an estimate of what I used.
Banana Applesauce Cookies:
-1/3 cup unsweetened applesauce
-3 tbsp egg beaters or one egg
-1 or two mushy bananas (depends on how much banana flavor you want)
- 2 tbsp peanut butter....or more :) (optional)
-1/2 tsp baking powder
-1.5 tsp vanilla extract
-1 cup oats
-3/4 cup flour (I use whole wheat or barley flour)
-2 tsp cinnamon
- 2 tsp agave nectar (optional)
First I mush the banana in seran wrap so that it is stirable. I usually just add all the ingredients together in a bowl and then stir them together at once. If these measurments seem a little off, and the batter is a little runny, add more flour to get it to the normal cookie dough consistancy (although this dough should naturally be a little wetter than normal cookie dough)
Bake them at 350 for about 7 to 8 minutes.
